Spears of Goodness!

Fresh asparagus marks the coming of spring. At Barrie Brothers Asparagus farm, the asparagus is handpicked, and looks so fresh that it’s tempting to take a bite right then and there.  One of my favorite asparagus dishes to make on a busy weeknight is prosciutto-wrapped asparagus. It’s a simple dish, and can be done in just 20 minutes, yet the flavour is amazing!

1. Usually, to start off, you would break off the tough ends of the asparagus. With fresh asparagus however, there’s no need to do this, because the ends are just as tender as the tips.

2. Take a thin slice of prosciutto and wrap it around each individual asparagus at an angle, leaving the tip and end visible.

3. Arrange the wrapped asparagus in a single layer within a baking dish.  Drizzle some olive oil and season it with salt and pepper. Bake in a preheated oven at 375F for 15min or until tender.

When it’s done, I like to serve it with a little bit of balsamic vinegar, which goes great with the saltiness of the prosciutto, and gives the dish an extra zing! The taste of same-day picked asparagus – tender, sweet and without any woodiness - is truly eye opening. Why not make your own while this tasty vegetable is in season?

Tried this this weekend and it is good! Definitely would recommend the balsamic vinegar as well.
