I had a chance to chat with Sean Brady owner of the Kolapore Spring Fish Hatchery at the Tourism meets Agriculture forum in Thornbury a few weeks ago and was fascinated by his story and vision for the future of his business. Sean is a man with a passion for fresh organic local food. Nestled in the back woods of Kolapore, a trail system on Grey Road 2 linked to the Bruce Trail lays a spring fish hatchery that Sean has created to raise some of the most amazing trout in Ontario. His spawn is held in natural spring water and raised to the highest standards of naturally sustainable aquaculture. The secret to Sean’s success and superior taste is the cool pure spring water that is never re-circulated and rich freshwater shrimp that the trout naturally feed on. I sampled 2 types of his trout at the forum prepared by a chef from the Oliver and Bonacini restaurant at the Village of Blue Mountain and I have to say wow! It was firm and flavorful and definitely a superior product.
If you are like me and love the outdoors and like to hike than adventuring to Kolapore and the Spring Fish Hatchery is right up your ally. On a sunny day, take in the scenery of the valley, take lots of pictures, and get some exercise.
Baked Trout Recipe
4 to 6 trout (approximately 1/2 lb. each)
3 Tablespoons lemon juice
1 teaspoon coarse (kosher) salt (or to your taste)
2 cloves minced garlic (or to your taste)
1 cup Chardonnay or Sauvignon Blanc wine
2 Tablespoons Italian parsley
2 Tablespoons chopped green onion
2 Tablespoons dry seasoned bread crumbs
4 Tablespoons melted butter or margarine
Wash and dry trout. Rub the outside of trout with lemon juice and sprinkle with salt.
Arrange the minced garlic in the bottom of a buttered baking dish that is large enough to hold the trout in a single layer.
Place trout in the dish and pour the wine over the top.
Sprinkle with parsley, green onion, and bread crumbs. Spoon the melted butter evenly over the top.
Bake at 400F (200c) degrees for 20 minutes. Makes 4 to 6 servings.
